- 1 cup ( 150 grams ) all purpose flour
- 1 cup ( 210 grams ) granulated sugar
- 2/3 cup ( 152 grams ) vegetable oil
- 2 cups ( 210 grams ) grated carrots
- 2 eggs
- 1/2 teaspoon ( 3 grams ) salt
- 1/2 teaspoon ( 3 grams ) baking soda
- 1 teaspoon ( 5 grams ) baking powder
- 1 teaspoon ( 2 grams ) ground cinnamon
- 1 teaspoon ( 4 grams / 5 ml ) vanilla extract
- 1/4 teaspoon ( 1 gram ) ground ginger
- 2 cups ( 500 ml ) grated carrots
