One bite and you will fall in love with this super fudge cake ! It’s super moist and super fudgy in texture. It’s an Australian mud cake, but in simple terms it’s a fudge brownie type cake. It’s dense like a fudge brownie, dark and delicious but it’s also super moist and tall like a chocolate cake.
I cover the chocolate mud cake with a delicious dark chocolate butter ganache which is amazing. The recipe for that is below.

Dark Chocolate Butter Ganache Recipe:

This is my super easy roasted, salted crunchy chickpeas recipe.
They are low fat too ! ( no oil added )
– A can of chickpeas ( garbanzo beans )
– salt
Bake for 30 minutes at 425 degrees F / 220 degrees C
Note: You may see some recipes add oil to the chickpeas before
going into the oven – I have found this just delays the chickpeas getting crunchy, so it will take longer to bake.
We want our chickpea snack to be crunchy, not oily. This also make them much lower in fat !

This is my super simple yeast pizza dough. My pizza dough is authentic and one I’ve used for over 25 years.
I’ll show you from start to finish how to make this beautiful dough. At the end I’ll use this dough and bake a pizza.
If you’ve always wanted to make authentic pizza dough at home, this recipe is for you ! I’ve worked in many pizza places in my lifetime, and contrary to common belief, there is nothing secret or special about pizza dough, it’s a simple recipe, and easy to make at home !

In large bowl, beat shortening and butter with electric mixer until light and fluffy. Beat in vanilla.
Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry.
Gradually add milk; beat at medium speed until light and fluffy.
For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.
For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and add 1/2 teaspoon No-Color Butter Flavor. Add up to 4 tablespoons light corn syrup, water or milk to thin for icing cakes.
Hints
Keep bowl covered with a damp cloth until ready to use.
If using a hand mixer, beat shortening, butter, if used, and liquid first, then add sugar, as above. It may be necessary to add additional sugar for the correct consistency.
Into a large bowl, add in your soft butter and mix it for a few moments until it is well creamed
Sift in the powdered sugar, all in one shot.
With your hand mixer, mix the powdered sugar and butter until they are completely mixed
Add in your vanilla and whipping cream, and mix until well mixed. You may then increase your mixer speed to high and really whip well to incorporate a lot of air into the frosting. This will make it light and fluffy.
Your frosting is ready ! If you wish your frosting to be more firm, you may put the frosting into the fridge for 15 minutes and whip again, and it will be much more firm. If you wish it to be even firmer, you may add additional icing sugar to it to obtain your level of more firmness.
